Hot Sauce on Thanksgiving: Where It Belongs (and Where It Doesn't)
Share
Thanksgiving is the one meal where the whole family eats the same food, which is exactly why hot sauce needs a plan. The rule that keeps the peace: never sauce the shared dish. Split it, label it, and let everyone pick their own level. Here's where heat belongs on the table, and where it absolutely doesn't.
- Split, don't spike. Make a small "hot" version of one or two sides and leave the rest alone.
- Leave the bird alone. Put bottles on the table and let people add their own.
- The real payoff is Friday. The leftover sandwich is where hot sauce wins Thanksgiving.
Where heat belongs
The hot gravy boat
Pour a cup of gravy into a small saucepan. Warm the Revenge bottle in hot water so it pours, then stir a pinhead-size drop into the gravy. That’s the single-bowl dose from our dosing guide, and Revenge is 1,000,000 Scoville of habanero, so wait a minute, taste, and only then decide on another. Pour it into its own boat and label it. Everyone else gets the regular boat.
Cranberry sauce with a sting
Sweet and hot is the easiest win on the table. Stir 3 or 4 drops of Pure Gold, Dragon's Breath Edition into a cup of cranberry sauce. Its mango and peach play right into the fruit, and the Carolina Reaper shows up a few seconds later. Over 1,000,000 Scoville, so start small and taste.
Deviled eggs, before dinner
Stir a teaspoon of Reaper Sriracha into the yolk mix for a dozen eggs, taste, and add more if you want it. Make half the tray hot and half regular, and dust the hot ones with paprika so people can tell them apart.
Bottles on the table
Set out two or three hot sauces like you'd set out salt and pepper: something approachable, something serious. The Original (357,000 Scoville) for the curious, Gold Edition (1,000,000 Scoville) for the uncle who says nothing is ever hot enough.
Where it doesn't
- The turkey. Fifteen people eat it. Don't make that decision for all of them.
- The kids' table. Keep the bottles on the adult end.
- The extract bottle. Pepper extract is a cooking additive, not a condiment. It goes into food on the stove, and the bottle never goes on the table.
The day-after sandwich
Mad Dog leftover sandwich
- Make the spread. Stir 1 teaspoon of Reaper Sriracha into 3 tablespoons of mayo. Taste and adjust.
- Build it. Toasted sourdough, the spread, sliced turkey, a layer of stuffing, and a smear of cranberry sauce.
- Finish it. A few drops of Gold Edition over the top, close it up and press it for a minute in a hot pan.
- Dip it. Warm a little leftover gravy on the side. Hot gravy if there's any left.
Bringing something for the host?
A gift pack beats another bottle of wine nobody opens. The Collector's Gift Pack covers 357,000 to 1,000,000 Scoville in four bottles: the Original, Collector's Edition, Silver and Gold. More ideas in our 2026 hot sauce gift guide.
Pick your heat
Keeping the peace: the Original. Starting a debate: Gold Edition. Taking the gravy boat hostage: one drop of Revenge. Feeding the one guy who brought his own bottle last year: give him the whole Collector's Gift Pack. Nothing mild here.
